Itโs 5 oโclock somewhere. Welcome to Happy Hour: a series where we try unique and exciting cocktails together!
Today, I’m sharing two simple and refreshing summer cocktail recipes to whip up for any tiki-themed gathering.
These recipes can be prepared in advance in large quantities and served in pitchers with faux ice cubes to prevent dilution.
They are essentially premade cocktails without alcohol, allowing guests to add their preferred spirits. I went ahead and designed a few labels for the pitchers, reminding guests to “just add tequila!”
For this event, I opted for a “tiki tequila tasting” theme to complement the recipes, and offered a variety of tequilas for guests to sample.
These recipes can also serve as mocktails by omitting the alcohol, adding versatility to your drink options. Click here for more memorable mocktail recipes!
I love to indulge in the entire Party Planning process, so I also ordered a personalized Tiki Bar sign and custom bottle labels from Etsy. To keep the theme alive and add a bit of fun to the table decor, I picked up a few coconut drinking cups with hibiscus flowers for the girlies to enjoy. Every cocktail tastes better in a coconut, anyway!

Tiki Rita
INGREDIENTS | approx 7-10 servings
5 cups pineapple juice
2 cups coconut water – pineapple flavored coconut water is ideal for this recipe!
1/2 cup lime juice
Combine all ingredients in a large pitcher and add slices of fresh limes for a pop of color!
Consider garnishing with fresh mint leaves, fresh pineapple, lime wedges, and a margarita salt rim.
Paloma
INGREDIENTS | approx 7-10 servings
5 cups grapefruit juice
1/2 cup simple syrup
2 cups club soda
Combine all ingredients in a large pitcher and add slices of fresh grapefruit for a pop of color! Serve as-is for a mocktail, or add tequila to each serving as you please!
Consider garnishing with fresh grapefruit and a tajin rim.
Bonus recipe: Key Lime Shots
A friend of mine also brought key lime shots made with tequila, key lime juice, and simple syrup – which were a hit! I wish I had better photos but the added touch of whipped cream topped with crushed graham crackers made these the perfect blend of tangy and sweet!
