In this post I’ll be sharing a super quick and easy flourless banana loaf recipe.

I’m going to start off by admitting that while I love to experiment in the kitchen, baking is not my forte. But a few weeks ago, I had some extra ripe bananas laying around and decided to salvage them with a somewhat beginner-friendly recipe. It’s not exactly banana bread, but instead a mash up of several recipes and also a dash of improvisation. This is a flourless recipe and uses maple syrup and honey as sweeteners. The texture resembles more of a dense pudding or loaf, making this a decadent treat to enjoy for dessert or alongside your morning coffee. Feel free to adjust the amount of chocolate chips and nuts to your liking! And while peanut butter and banana make the perfect pairing, you could also substitute the peanut butter for almond butter instead.
Banana Loaf Recipe
Makes about 7-10 servings.
INGREDIENTS
- 4 extra ripe bananas (+1 banana to slice for topping)
- 2 eggs
- 2 cups old fashioned oats
- 1/4 cup maple syrup
- 1 tsp baking powder
- 1/2 cup peanut butter
- dash of vanilla extract
- 3/4 cup of chocolate chips
- 1/2 cup chopped walnuts
- 2 tbsp honey
DIRECTIONS
1- Preheat oven to 350ยฐ F.
2- Blend bananas, eggs, oats, maple syrup, baking powder, and vanilla extract until smooth but don’t over blend.
3- Transfer to bowl and stir in chocolate chips and chopped walnuts.
4- Pour mixture into a parchment paper lined baking pan.
5- Top with banana slices, extra chocolate chips, and a drizzle of honey.
6- Bake for 45 min to an hour. Oven times vary.
